Hearty Guinness Beef Stew
A rich and flavorful stew made with tender beef, vegetables, and stout beer.
Ingredients
1 ½ | lbs stew meat, cubed |

½ | cup flour |
1 | teaspoon salt |
1 | teaspoon pepper |
1 | tablespoon oil |
2 | medium potatoes, cubed |
1 | onion, chopped |
2-3 | carrots, sliced (or a handful of baby carrots, sliced) |
1 | cup peas, lightly steamed or canned |
2 | (10 ½ ounce) cans beef consomme |
1 | (11 ounce) Guinness stout |
Instructions
1. | In a medium bowl, mix flour, salt, and pepper. Coat the stew meat in the flour mixture, reserving the remaining flour. |

2. | Heat oil in a non-stick stock pot. Brown the meat on all sides until just pink on the outside is gone. |
3. | Add the potatoes, onion, carrots, and the reserved flour. Stir and cook until the vegetables begin to soften. |
4. | Pour in both cans of beef consomme and the Guinness stout. Simmer for 15-20 minutes, or longer if desired. |
5. | Just before serving, add the peas and stir to warm them up. |
6. | Serve this hearty stew with crusty bread warm from the oven and butter for a delicious meal. |
