A comforting and nutritious soup packed with lentils, spelt, and aromatic spices, perfect for a cozy meal on a chilly day.

Ingredients

1 chopped
3 minced
6 cups vegetable bouillon or stock
1 can diced
½ teaspoon ground turmeric
½ teaspoon curry powder
1 teaspoon ground black pepper
1 pinch cayenne (or to taste)
1 juice of
1 cup (or grain of choice)

Instructions

1. In a large pot, sauté the small chopped onion and minced garlic in ½ cup of vegetable bouillon until softened.
2. Add in the remaining vegetable bouillon, diced tomatoes, ground turmeric, curry powder, black pepper, and a pinch of cayenne. Stir well.
3. Let the soup simmer until the lentils are tender and the flavors have melded together.
4. Take out half of the soup and use a hand blender to puree it until smooth. Return the puree back into the pot and mix well.
5. Stir in the freshly squeezed lemon juice and the cooked spelt, or any grain of your choice, into the soup.
6. For a delightful presentation, consider serving the soup with a lemon wedge and a dollop of yogurt mixed with fresh herbs such as basil or cilantro.
7. NOTE: Feel free to add additional vegetables or greens while cooking, just remember to adjust the amount of bouillon accordingly.
