Hearty Lentil Spelt Soup
A comforting and nutritious soup packed with lentils, spelt, and aromatic spices, perfect for a cozy meal on a chilly day.
Ingredients

6 | cups vegetable bouillon or stock |
1 | can diced |
½ | teaspoon ground turmeric |
½ | teaspoon curry powder |
1 | teaspoon ground black pepper |
1 | pinch cayenne (or to taste) |

1 | cup (or grain of choice) |
Instructions
1. | In a large pot, sauté the small chopped onion and minced garlic in ½ cup of vegetable bouillon until softened. |

2. | Add in the remaining vegetable bouillon, diced tomatoes, ground turmeric, curry powder, black pepper, and a pinch of cayenne. Stir well. |
3. | Let the soup simmer until the lentils are tender and the flavors have melded together. |
4. | Take out half of the soup and use a hand blender to puree it until smooth. Return the puree back into the pot and mix well. |
5. | Stir in the freshly squeezed lemon juice and the cooked spelt, or any grain of your choice, into the soup. |
6. | For a delightful presentation, consider serving the soup with a lemon wedge and a dollop of yogurt mixed with fresh herbs such as basil or cilantro. |
7. | NOTE: Feel free to add additional vegetables or greens while cooking, just remember to adjust the amount of bouillon accordingly. |
