Instructions

For preparing the stew
- Trim the excess fat from the beef and cut it into even 1-inch chunks.
- Place the Italian dressing and beef in a large ziplock bag, then refrigerate for 30 minutes.
- In a large pot, cook the chopped bacon over medium heat for about 5 minutes until crisp. Remove the bacon using a slotted spoon and discard excess bacon fat.
- Add the onion and mushrooms to the pot, and cook over medium heat for 10 minutes.
- Remove the beef from the marinade, discard the marinade, then add the beef, carrots, potatoes, stewed tomatoes with liquid, beef broth, and cooked bacon to the pot.
- Bring the mixture to a boil, stirring constantly, then reduce the heat to low. Cover and simmer for 1 1/4 hours.
- Uncover the pot and continue to simmer for an additional 15 minutes or until the meat is tender and the sauce is thickened, stirring constantly.
