For the stew

¾ cup Italian dressing
2 lbs beef stew meat, cut into chunks
6 slices bacon, chopped
1 large onion, chopped
3 cups mushrooms, sliced
3 cups carrots, sliced
3 potatoes, peeled and cut into large chunks
1 (14 ounce) can (14 ounce) can stewed tomatoes, undrained
1 (14 ounce) can (14 ounce) can beef broth

Instructions

  • For preparing the stew

    1. Trim the excess fat from the beef and cut it into even 1-inch chunks.
    2. Place the Italian dressing and beef in a large ziplock bag, then refrigerate for 30 minutes.
    3. In a large pot, cook the chopped bacon over medium heat for about 5 minutes until crisp. Remove the bacon using a slotted spoon and discard excess bacon fat.
    4. Add the onion and mushrooms to the pot, and cook over medium heat for 10 minutes.
    5. Remove the beef from the marinade, discard the marinade, then add the beef, carrots, potatoes, stewed tomatoes with liquid, beef broth, and cooked bacon to the pot.
    6. Bring the mixture to a boil, stirring constantly, then reduce the heat to low. Cover and simmer for 1 1/4 hours.
    7. Uncover the pot and continue to simmer for an additional 15 minutes or until the meat is tender and the sauce is thickened, stirring constantly.
