Ingredients

1 lb fish fillet (halibut, cod, haddock, pollock or even salmon, fresh or thawed)
1 egg
2 tablespoons milk
1 cup fine breadcrumbs
14 teaspoon salt
14 teaspoon fresh ground pepper
12 teaspoon Italian herb seasoning
12 teaspoon dry mustard
2 tablespoons olive oil or canola oil

Instructions

1. Preheat the oven to 450°F (230°C).
2. Slice the large fish fillets to the desired size.
3. In a bowl, beat the egg and milk together.
4. In another bowl or on a plate, combine the breadcrumbs, salt, pepper, Italian herb seasoning, and dry mustard.
5. Place the oil on a baking sheet and put it in the preheated oven while coating the fish.
6. Dip each piece of fish in the egg mixture and then in the breadcrumb mixture.
7. Press the fish firmly into the crumbs.
8. Place the fillets on the hot oiled baking sheet.
9. Immediately flip the fillets to ensure both sides are oiled.
10. For half-inch thick fillets, bake for four minutes, then turn and bake for an additional four minutes.
