Herb-Crusted Baked Fish

Ingredients
1 | lb fish fillet (halibut, cod, haddock, pollock or even salmon, fresh or thawed) |

1 | egg |
2 | tablespoons milk |
1 | cup fine breadcrumbs |
1⁄4 | teaspoon salt |
1⁄4 | teaspoon fresh ground pepper |
1⁄2 | teaspoon Italian herb seasoning |
1⁄2 | teaspoon dry mustard |
2 | tablespoons olive oil or canola oil |
Instructions
1. | Preheat the oven to 450°F (230°C). |

2. | Slice the large fish fillets to the desired size. |
3. | In a bowl, beat the egg and milk together. |
4. | In another bowl or on a plate, combine the breadcrumbs, salt, pepper, Italian herb seasoning, and dry mustard. |
5. | Place the oil on a baking sheet and put it in the preheated oven while coating the fish. |
6. | Dip each piece of fish in the egg mixture and then in the breadcrumb mixture. |
7. | Press the fish firmly into the crumbs. |
8. | Place the fillets on the hot oiled baking sheet. |
9. | Immediately flip the fillets to ensure both sides are oiled. |
10. | For half-inch thick fillets, bake for four minutes, then turn and bake for an additional four minutes. |
