Nutty Peanut Energy Bars

1⁄2 | cup dry roasted salted peanuts |

1⁄2 | cup roasted sunflower seeds (or more peanuts or other nuts) |
1⁄2 | cup raisins (or other dried fruit) |
2 | uncooked oatmeal, old-fashioned or instant oatmeal |
2 | toasted rice cereal (Rice Krispies) |
1⁄4 | cup toasted wheat germ (optional) |
1⁄2 | cup peanut butter (creamy or crunchy) |
1⁄2 | cup packed brown sugar |
1⁄2 | cup light corn syrup |
1 | teaspoon vanilla |
Instructions
1. | In a large bowl, combine the dry roasted salted peanuts, roasted sunflower seeds, raisins, oatmeal, and toasted rice cereal. Add the wheat germ if desired, and set aside. |

2. | In a medium microwaveable bowl, mix together the peanut butter, brown sugar, and corn syrup. Microwave on high for two minutes. Stir in the vanilla until well blended. |
3. | Pour the peanut butter mixture over the dry ingredients and mix until everything is evenly coated. |
4. | For neat squares, transfer the mixture into an 8 x 8-inch pan that has been greased with cooking spray. For bars, spoon the mixture into a 9 x 13-inch oblong pan. Press down firmly (greasing your fingers with margarine, oil, or cooking spray can help). |
5. | Allow the mixture to set for about an hour to firm up, then slice into either squares or bars. |
