Ingredients for Homemade Teriyaki Chicken

1 ½ lbs boneless skinless chicken breasts, cut into thin pieces
¾ cup water
½ cup soy sauce
brown sugar (use ¾-1 cup, adjust as per sweetness preference)
¼ teaspoon garlic powder
teaspoon ground ginger
½ tablespoon cornstarch
1 tablespoon vegetable oil

    1. Combine water, soy sauce, brown sugar, garlic, and ginger in a bowl.
    2. Whisk the ingredients together until well mixed.
    3. Marinate the chicken in half of the sauce for 2-3 hours, turning it once.
    4. Stir cornstarch into the remaining sauce and bring it to a boil over medium-high heat. Stir constantly until the mixture boils and thickens slightly. Cool the mixture to room temperature.
    5. Drain the marinade off the chicken, reserving 2 tbsp of the marinade and discard the remaining marinade.
    6. Stir-fry the chicken in vegetable oil until it is almost done.
    7. Add the reserved 2 tbsp of marinade and continue stir-frying until the chicken is fully cooked and glazed.
    8. Serve the teriyaki chicken over hot rice with the cooled teriyaki sauce.
