These quesadillas keep the playful hot dog filling but use a more classic griddled-cheese structure: enough melting cheese, thin filling, and crisp tortillas. Serve them as a kid-friendly lunch or casual snack with salsa and sour cream on the side.

cups monterey jack cheese, shredded

pieces hot dog, thinly sliced

tablespoons white onion, finely chopped

teaspoons vegetable oil, divided
salsa, for serving
sour cream, for serving

Instructions

1. Heat a large skillet over medium heat and add 1 teaspoon vegetable oil.
2. Add the hot dog slices and onion, then cook for 3 to 4 minutes until the hot dog edges brown lightly and the onion softens.
3. Stir in the chili powder and chives, then transfer the filling to a plate.
4. Wipe out the skillet and return it to medium-low heat.
5. Lay 3 tortillas on a work surface and sprinkle each with 1/4 cup cheese.
6. Divide the hot dog filling evenly over the cheese, keeping the filling in a thin layer.
7. Sprinkle each quesadilla with the remaining cheese and top with the remaining tortillas.
8. Brush the skillet with a little of the remaining oil and add 1 assembled quesadilla.
9. Cook for 2 to 3 minutes, pressing gently with a spatula, until the bottom tortilla is golden and crisp.
10. Flip the quesadilla and cook for 2 to 3 minutes more, until the second side is crisp and the cheese is fully melted.
11. Transfer the quesadilla to a cutting board and repeat with the remaining quesadillas, brushing the skillet lightly with oil as needed.
12. Let each quesadilla rest for 1 minute, then cut into wedges and serve with salsa and sour cream.
