Matchsticked potatoes and slow-softened onions are layered with anchovy fillets, then baked under cream until the top bronzes and the anchovies dissolve into a savory backbone you couldn't name blind — salty, sweet and deeply comforting. Six servings, 80 minutes, and a dish that has tempted holiday tables since the 1920s.

anchovy fillet(s)

Instructions

1. Thinly slice the onions.
2. In a heavy pan, sauté the onions in butter until they turn golden.
3. Slice the potatoes into thin rounds.
4. Grease a baking dish with butter, then arrange a layer of potatoes, followed by a layer of onions, and scatter some anchovy fillets.
5. Continue layering until the final layer of potatoes is reached.
6. Drizzle a small amount of oil from the anchovies over the top potato layer, then bake at 180 degrees Celsius for 10 minutes.
7. Remove the baking dish from the oven, pour 3/4 of the cream over the potatoes, then return to the oven and bake for an additional 20 minutes.
8. Once again, remove the baking dish from the oven, pour the remaining cream over the potatoes, and continue baking for another 30 to 40 minutes, or until the potatoes are tender in the middle and the top is crispy and brown.
9. Pro Tip: When removing the hot dish from the oven, use caution. If your oven has glide-out racks, utilize them to prevent burns.
