A delightful and refreshing salad bursting with vibrant colors and flavors, created by Chef Korin.

Ingredients

3 tomatoes
1 English cucumber, peeled
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
2 teaspoons high-quality olive oil
14 teaspoon kosher salt
12 cup full-fat feta cheese, crumbled
12 cup slivered almonds
2 ripe avocados
1 lemon, juiced

Instructions

    1. Begin by finely dicing the large, ripe tomatoes, peeling and dicing the English cucumber, and finely dicing the red, yellow, and orange bell peppers. Place them in a large salad bowl.
    2. Drizzle high-quality olive oil over the vegetables, sprinkle kosher salt, crumble full-fat feta cheese, and add slivered almonds. Gently stir to combine.
    3. Prepare the ripe avocados by opening and pitting them. Using a butterknife, carve the meat into large chunks and add them to the salad bowl. Using a spoon, gently stir to incorporate the avocado, allowing it to break up slightly and add a creamy texture to the salad.
    4. Squeeze fresh lemon juice over the salad, stirring gently to combine all the ingredients. Taste and adjust seasoning if needed.
