A delightful Lebanese-style pilaf dish featuring fresh fava beans, ground chicken, and aromatic spices.

Ingredients

1 garlic
½ teaspoon salt
1 tablespoon fresh lemon juice
¼ cup olive oil
½ small onion, finely chopped
½ lb ground chicken
salt
pepper
½ teaspoon allspice
2 long grain rice
½ cup zucchini, cut in ¼ inch dice (yellow squash would work as well)
1 cup fresh fava beans, blanched and peeled
2 ½ chicken stock, hot
½ cup cilantro leaf

Instructions

    1. Begin by creating a paste of garlic and salt by mashing them together on a cutting board. Mix the paste with fresh lemon juice in a small bowl and set it aside.
    2. In a heavy saucepan, heat olive oil and sauté finely chopped onions until they soften.
    3. Add the ground chicken to the saucepan and cook on high heat, breaking up the meat until juices start to run out. Season with salt, pepper, and allspice.
    4. Introduce long grain rice, diced zucchini, blanched and peeled fresh fava beans, and hot chicken stock to the saucepan. Reduce heat, cover, and allow to simmer for 15 minutes.
    5. Turn off the heat.
    6. Uncover the saucepan and incorporate the garlic and lemon mixture, stirring gently to combine.
    7. Cover the saucepan and let the pilaf rest for an additional 5 minutes.
    8. Transfer the flavorful Lebanese Fava Bean Pilaf into a serving dish, garnish with fresh cilantro leaves, and serve promptly.
