Lemon Cream Pasta with Parmesan Cheese

Ingredients
1 | pound cooked al dente, drained and set aside note: you can reserve some pasta water for the sauce, but in a pinch, hot water also works. |

1 | cup olive oil |
1 | teaspoon finely minced |
3 | or 4 small lemons |
1 1⁄2 | cups heavy cream also works |
1 | cup (1/3 reserved for sprinkling) |
1⁄2 | cup finely chopped |

Instructions
1. | Grate the lemons to extract 1 tablespoon of zest, then juice all the lemons and set the juice aside. |

2. | In a large dutch oven, heat olive oil and sauté finely minced garlic until aromatic. |
3. | Pour whole milk or half-and-half, lemon zest, and approximately 1/2 cup of water into the dutch oven over high heat. Cook for 2-3 minutes until the mixture slightly thickens. |
4. | Add the cooked al dente pasta to the pot and toss until well coated. Mix in 3/4 cup of parmesan, lemon juice, and gently combine. If desired, adjust the consistency by adding some reserved pasta water or hot water. |
5. | Stir in finely chopped chives or scallions, season with salt and a generous amount of fresh ground pepper. |
6. | Serve immediately in large bowls, garnishing each serving with a sprinkle of the remaining parmesan cheese. |
