Lemon Cream Pasta with Parmesan Cheese

Delight your taste buds with this creamy and zesty pasta dish, featuring a luxurious lemon cream sauce and savory parmesan cheese.

Ingredients

1 pound cooked al dente, drained and set aside note: you can reserve some pasta water for the sauce, but in a pinch, hot water also works.
1 cup olive oil
1 teaspoon finely minced
3 or 4 small lemons
1 12 cups heavy cream also works
1 cup (1/3 reserved for sprinkling)
12 cup finely chopped
to taste

Instructions

1. Grate the lemons to extract 1 tablespoon of zest, then juice all the lemons and set the juice aside.
2. In a large dutch oven, heat olive oil and sauté finely minced garlic until aromatic.
3. Pour whole milk or half-and-half, lemon zest, and approximately 1/2 cup of water into the dutch oven over high heat. Cook for 2-3 minutes until the mixture slightly thickens.
4. Add the cooked al dente pasta to the pot and toss until well coated. Mix in 3/4 cup of parmesan, lemon juice, and gently combine. If desired, adjust the consistency by adding some reserved pasta water or hot water.
5. Stir in finely chopped chives or scallions, season with salt and a generous amount of fresh ground pepper.
6. Serve immediately in large bowls, garnishing each serving with a sprinkle of the remaining parmesan cheese.
