Savor the flavors of Greece with this succulent lemon herb chicken dish, featuring tender chicken breasts marinated in a zesty lemon juice mixture, served alongside roasted potatoes, bell peppers, onions, and mushrooms. Ingredients

2 teaspoons lemon zest
14 cup fresh lemon juice
2 tablespoons olive oil
4 large garlic cloves, minced- more if you like
1 tablespoon oregano
34 teaspoon salt
12 teaspoon pepper, we like pepper- reduce if you like
6 medium red potatoes, about the size of a lemon
1 green pepper, cut into strips
1 red onion, wedged
8 mushrooms, cleaned
4 bone in chicken breasts (½ to ¾ lbs per breast) or boneless skinless chicken breasts

Instructions

  • Preparation

    1. Combine lemon zest, fresh lemon juice, olive oil, minced garlic, oregano, salt, and pepper in a bowl. Set aside.
    2. Preheat the oven to 350°F (177°C) and spray a 10x13 pan with cooking spray. For best results, use a larger pan to allow the ingredients to cook evenly.
    3. Rinse the red potatoes and cut them into fourths, leaving the skin on if desired. Place them in the prepared pan.
    4. Add green pepper strips, red onion wedges, and cleaned mushrooms to the pan.
    5. Drizzle half of the lemon juice mixture over the veggies and toss to coat them.
    6. Arrange the chicken breasts on top of the vegetables and drizzle the remaining lemon mixture over the chicken. Use a brush or your fingers to evenly distribute the marinade.
    7. Bake in the preheated oven until the chicken is no longer pink in the center, basting it after 15 minutes.
    8. Note: For a lighter option, reduce the olive oil and opt for boneless, skinless chicken breasts. If using bone-in chicken, bake for about 1 hour.
    9. If the potatoes need more time to cook after the chicken is done, cover the chicken with foil to keep it warm. Return the pan to the oven until the potatoes are cooked through.
    10. For optimal results, use a stoneware pan for better heat conduction. Adjust the cooking time if using a metal or glass pan.
    11. Feel free to add extra onions, peppers, and mushrooms to the dish, but consider doubling the sauce and cooking the vegetables separately for faster and more even cooking.
