Ingredients

Burger Patties

1 pound ground beef or ground pork
14 teaspoon turmeric
2 tablespoons minced garlic
2 tablespoons minced lemongrass
12 cup minced shallots
2 tablespoons minced ginger
1 teaspoon salt
14 cup cooked jasmine rice, cooled
14 teaspoon cayenne powder
14 cup finely chopped plum tomatoes
2 tablespoons peanut oil

Instructions

Preparation and Cooking

1. Begin by placing the ground meat in a mixing bowl and generously sprinkle with turmeric.
2. In a large mortar and pestle or food processor, combine the minced lemongrass, garlic, shallots, ginger, and salt. Pulse or pound until a rough paste forms. Incorporate the cooked jasmine rice, cayenne powder, and chopped plum tomatoes, and blend again until combined. Integrate this aromatic paste into the meat mixture, kneading thoroughly to meld the ingredients.
3. With your hands, shape the mixture into uniform balls, each approximately 1 inch in diameter, and then gently flatten them into thick patties.
4. Heat a heavy skillet over high heat and add the peanut oil. Once the oil is shimmering, lower the heat slightly and carefully add the patties. If excess moisture is released, increase the heat to evaporate it effectively. Cook the patties for 2 to 3 minutes on each side, or until they reach your desired level of doneness.
