6 medium yams or sweet potatoes, peeled and cut crosswise into ½-inch-thick slices
8 tablespoons unsalted butter
1 cup (packed) brown sugar
14 cup maple syrup
1 teaspoon finely grated orange zest
1 teaspoon ground cinnamon
12 teaspoon ground nutmeg
12 teaspoon kosher salt
14 teaspoon ground ginger
14 cup bourbon
1 tablespoon pure vanilla extract

Instructions

  • For Glazed Sweet Potatoes

    1. Preheat the oven to 350°F (175°C) and prepare a 13 x 9-inch baking dish.
    2. In a medium saucepan over medium heat, melt the unsalted butter. Combine the brown sugar, maple syrup, finely grated orange zest, ground cinnamon, ground nutmeg, kosher salt, and ground ginger.
    3. Pour in the bourbon and ignite to flambé until the alcohol evaporates, approximately 30 seconds. Stir in the pure vanilla extract.
    4. Coat the sweet potato slices with the bourbon mixture in the baking dish. Cover it with foil and bake for 30 minutes. Baste the potatoes with the bourbon glaze, re-cover, and bake for an additional 15 to 20 minutes until they are tender. Allow the dish to cool for about 10 minutes before serving.
