3⁄4 | cup red wine vinegar |
1⁄2 | cup orange juice |

1 1⁄2 | stoned ready soaked prunes |
3⁄4 | cup dried apricots |
3⁄4 | cup green olives |
1⁄2 | cup capers |
4 | bay leaves |
10 | chicken joints (2 chickens, chopped) |
1⁄2 | bottle of white wine |
1 | tablespoon brown sugar |

1. | In a large bowl, combine red wine vinegar, orange juice, olive oil, stoned ready-soaked prunes, dried apricots, green olives, capers, bay leaves, crushed garlic, dried oregano, salt, and pepper. |

2. | Pour the marinade over the chicken pieces, ensuring they are well coated. Cover and refrigerate overnight for maximum flavor infusion. |
3. | Preheat the oven to 350F (175C). |
4. | Transfer the marinated chicken to a baking dish, sprinkle brown sugar over the top, and pour white wine into the dish until the chicken is nearly covered. |
5. | Bake in the preheated oven for approximately 40 minutes, or until the chicken is cooked through, tender, and juicy. |
6. | Before serving, garnish with a generous handful of freshly chopped parsley and sprinkle the zest of an orange over the dish for a burst of citrus freshness. |
