Mediterranean Chicken with Oranges and Olives

¾ | cup red wine vinegar |
½ | cup orange juice |
¾ | cup olive oil |
1 ½ | stoned ready soaked prunes |
¾ | cup dried apricots |
¾ | cup green olives |
½ | cup capers |
4 | bay leaves |
10 | chicken joints (2 chickens, chopped) |
½ | bottle of white wine |
1 | tablespoon brown sugar |
Zest of an orange | |
1 | handful parsley |
Instructions

- In a large bowl, combine red wine vinegar, orange juice, olive oil, stoned ready-soaked prunes, dried apricots, green olives, capers, bay leaves, crushed garlic, dried oregano, salt, and pepper.
- Pour the marinade over the chicken pieces, ensuring they are well coated. Cover and refrigerate overnight for maximum flavor infusion.
- Preheat the oven to 350F (175C).
- Transfer the marinated chicken to a baking dish, sprinkle brown sugar over the top, and pour white wine into the dish until the chicken is nearly covered.
- Bake in the preheated oven for approximately 40 minutes, or until the chicken is cooked through, tender, and juicy.
- Before serving, garnish with a generous handful of freshly chopped parsley and sprinkle the zest of an orange over the dish for a burst of citrus freshness.
