A delightful Mediterranean-inspired dish featuring tender chicken infused with the flavors of oranges, olives, and aromatic seasonings.

Ingredients

4 cloves of garlic, crushed
4 teaspoons dried oregano
1 teaspoon salt
½ teaspoon pepper
¾ cup red wine vinegar
½ cup orange juice
¾ cup olive oil
1 ½ stoned ready soaked prunes
¾ cup dried apricots
¾ cup green olives
½ cup capers
4 bay leaves
10 chicken joints (2 chickens, chopped)
½ bottle of white wine
1 tablespoon brown sugar
Zest of an orange
1 handful parsley

Instructions

    1. In a large bowl, combine red wine vinegar, orange juice, olive oil, stoned ready-soaked prunes, dried apricots, green olives, capers, bay leaves, crushed garlic, dried oregano, salt, and pepper.
    2. Pour the marinade over the chicken pieces, ensuring they are well coated. Cover and refrigerate overnight for maximum flavor infusion.
    3. Preheat the oven to 350F (175C).
    4. Transfer the marinated chicken to a baking dish, sprinkle brown sugar over the top, and pour white wine into the dish until the chicken is nearly covered.
    5. Bake in the preheated oven for approximately 40 minutes, or until the chicken is cooked through, tender, and juicy.
    6. Before serving, garnish with a generous handful of freshly chopped parsley and sprinkle the zest of an orange over the dish for a burst of citrus freshness.
