3 boneless skinless chicken breasts
1 cup white rice
2 cups water
1 (1 ¼ ounce) package taco seasoning
1 (15 ounce) jar salsa
2 cups shredded monterey jack cheese
sour cream (optional)

Instructions

1. Preheat the oven to 375°F.
2. In a 9 x 13 x 2 baking dish, combine the white rice, salsa, and taco seasoning.
3. Place the boneless skinless chicken breasts on top of the rice mixture.
4. Pour 2 cups of water over the chicken and rice.
5. Bake in the preheated oven for 45 minutes until the chicken is cooked through.
6. Remove the dish from the oven and sprinkle the shredded Monterey Jack cheese over the top.
7. Return to the oven and bake until the cheese is melted and bubbly.
8. Serve hot, and if desired, top each serving with a dollop of sour cream.
