Mexican Style Ground Beef

A delicious and flavorful Mexican-style dish made with ground beef, salsa, and vegetables, topped with cheese and fresh tomatoes.

1 | cup salsa |
1⁄2 | cup water |
1 | green pepper, chopped |
1 | bunch green onion, chopped |
1 | (8 ounce) package wide egg noodles |
1⁄2 | cup sour cream |
1⁄2 | cup shredded cheddar cheese |
1 | tomatoes, chopped |
Instructions

- In a large non-stick skillet, cook and stir the ground beef until browned.
- Remove excess fat from the skillet.
- Add salsa and water, then simmer for 10 minutes.
- Meanwhile, cook the pasta until al dente, then drain.
- Stir in the chopped green pepper and green onions, and continue simmering until the vegetables are crisp-tender.
- Add the cooked noodles and sour cream, mixing well.
- Sprinkle shredded cheddar cheese on top, cover the pan, and let the cheese melt.
- Top with chopped tomatoes before serving.
