Mint Chimichurri Lamb Chops

A flavorful dish featuring grilled lamb chops with a refreshing mint chimichurri sauce.

Ingredients

4 lamb chops (about 1" thick)
2 bundles of green onions
1 tablespoon olive oil
2 large cloves of garlic
½ cup fresh parsley leaves
½ cup fresh mint leaves
¼ cup fresh tarragon leaves
3 tablespoons white wine vinegar
4 tablespoons olive oil
pinch red pepper flakes
¼ teaspoon kosher salt
¼ teaspoon black pepper

Instructions

1. Preheat the grill to a medium-high heat, around 400-450 degrees Fahrenheit.
2. Begin by patting the lamb chops dry with a paper towel. Season with salt and pepper to your preference. Brush the green onions with 1 tablespoon of olive oil. Set them aside.
3. Grill the lamb chops to your desired level of doneness, approximately 4-5 minutes per side for a medium-rare result.
4. Grill the green onions for about 2 minutes, then flip and grill for an additional 2 minutes until they have grill marks and start to wilt. Once done, transfer the lamb chops and green onions to a cutting board or platter. Tent with foil and allow them to rest for 4-5 minutes before serving.
5. Drizzle the prepared mint chimichurri sauce over the grilled lamb chops and green onions just before serving.
