Ingredients

1 rutabaga, peeled and cut into ΒΌ-inch chunks
2 water
1 tablespoon vegetable oil
1 12 couscous
12 cup nutritional yeast
14 cup vegetable oil
14 cup apple cider vinegar
1 12 teaspoons honey
1 teaspoon Italian seasoning
1 teaspoon dried oregano
1 teaspoon dried dill weed
12 teaspoon ground black pepper
14 teaspoon cayenne pepper
1 pinch salt to taste (Optional)

Instructions

    1. Begin by setting up a steamer insert in a saucepan, filling it with water up to just below the bottom of the steamer. Bring the water to a boil and add the rutabaga chunks. Steam the rutabaga until it is just tender, approximately 10 minutes.
    2. In a separate saucepan, bring 2 cups of water and 1 tablespoon of vegetable oil to a boil. Remove from heat and stir in the couscous. Cover the saucepan and allow the couscous to stand until the water is absorbed, which usually takes around 14 minutes. Fluff the couscous with a fork.
    3. In a large bowl, whisk together the nutritional yeast, 1/4 cup of vegetable oil, apple cider vinegar, honey, Italian seasoning, oregano, dill, black pepper, and cayenne pepper to create the flavorful dressing.
    4. Combine the cooked couscous and steamed rutabaga with the prepared nutritional yeast dressing. Finish by seasoning the salad with salt according to your taste preferences.
