Pan-Seared Sage Pork Chops with Apple Slaw

Ingredients

1 | large granny smith apple, cut in half, cored, shredded |

1⁄2 | teaspoon dried sage |
9 | green cabbage, cored and coarsely shredded (about 1/2 head) |
3 | large carrots, shredded |
2 | tablespoons cider vinegar |
1⁄2 | teaspoon salt |
3⁄4 | cup chicken broth |
Instructions
1. | In a small bowl, combine freshly chopped sage, minced garlic, salt, and pepper. Rub the mixture all over the pork chops and let them marinate at room temperature for about 10 minutes. Heat a portion of olive oil in a large skillet over medium-high heat. Sear the pork chops until browned on both sides, approximately 1 to 2 minutes per side. Transfer the pork chops to a plate. |

2. | Using the same skillet, heat more olive oil over medium heat. Add sliced onion, shredded apple, and sage. Saute the mixture, stirring occasionally, until the onion is softened and golden brown, which should take about 4 to 5 minutes. Incorporate shredded cabbage, carrots, cider vinegar, and salt. Saute the slaw for an additional 5 minutes. Pour in the chicken broth and return the pork chops to the pan, spooning some of the slaw over the chops. |
3. | Cover the skillet and let it cook for another 5 to 7 minutes. Serve the pan-seared sage pork chops hot with the apple slaw on the side. |
