A delightful dish of fried green tomatoes coated in a crispy panko and Parmesan crust.
Ingredients
4 | medium green tomatoes, cored and cut into ¼-inch-thick slices |
---|---|
Salt | |
Sugar | |
2 | large eggs, lightly beaten |
1 | cup panko |
1 | cup freshly grated Parmesan cheese, plus more for serving |
2 | tablespoons olive oil, plus more if needed |
2 | tablespoons unsalted butter, plus more if needed |
Freshly ground black pepper |
Instructions
1. | Begin by laying the sliced green tomatoes on a baking sheet and generously seasoning both sides with a mixture of salt and sugar. Allow the tomatoes to sit for 30 minutes to enhance the flavors. |
---|---|
2. | Prepare a large non-stick sauté pan on the stove. In two separate wide shallow bowls, place the beaten eggs and combine the panko with the freshly grated Parmesan. Place the bowls near the stove for easy access. Pat dry the tomato slices with paper towels and season with a pinch of salt. Dip each tomato slice in the egg mixture, then coat thoroughly with the panko-Parmesan mixture, ensuring the coating adheres well. Place the coated tomatoes on a clean baking sheet. |
3. | Heat the sauté pan over medium-high heat and add olive oil and butter. Once the butter foams subside, add the tomato slices in a single layer, ensuring the base of the pan is covered. Allow the tomatoes to cook until a nut brown crust forms on each side. Cook in batches, adding more oil and butter as needed. Transfer the fried tomatoes to a warm serving platter, season with freshly ground black pepper, sprinkle with additional Parmesan cheese, and serve immediately. |
