This whiskey sour riff keeps the classic whiskey, lemon, and shaken-cocktail structure, then uses peach preserves as the main sweetener. A small measure of simple syrup rounds out the fruit while keeping the drink tart, bright, and recognizable as a sour.

Instructions

1. Chill a coupe or rocks glass while you build the drink.
2. Add the bourbon, lemon juice, peach preserves, simple syrup, and egg white to a cocktail shaker.
3. Shake without ice for 10 seconds to loosen the preserves and foam the egg white.
4. Add ice and shake hard until the shaker feels very cold, about 15 seconds.
5. Fine-strain the cocktail into the chilled glass.
6. Dot the foam with bitters and garnish with the lemon twist.
