A delicious and flavorful pasta dish featuring penne pasta tossed in a rich brown butter sauce with fresh sage and savory Italian sausage.

Ingredients

16 ounces penne
2 to 3 excellent quality mild Italian sausages
34 stick butter
7 fresh sage leaves, coarsely chopped
14 cup freshly grated Reggiano Parmesan
salt to taste

Instructions

1. Begin by boiling the penne in salted water until al dente. Drain the pasta, reserving 1/4 cup of the cooking water.
2. In a separate pan, cook the Italian sausage, breaking it up into bite-sized pieces.
3. In a small saucepan, carefully brown the butter until it turns a nutty golden color. Remove from heat and add the coarsely chopped sage leaves.
4. Toss the cooked penne in the brown sage butter sauce, then combine with the cooked sausage. If the pasta seems too dry, add a little of the reserved pasta cooking water.
5. Finally, top the dish with freshly grated Reggiano Parmesan cheese and season with salt to taste.
