Penne with Brown Butter, Sage and Sausage

A delicious and flavorful pasta dish featuring penne pasta tossed in a rich brown butter sauce with fresh sage and savory Italian sausage.

2 | to 3 excellent quality mild Italian sausages |
3⁄4 | stick butter |
7 | fresh sage leaves, coarsely chopped |
1⁄4 | cup freshly grated Reggiano Parmesan |
salt to taste |
Instructions
1. | Begin by boiling the penne in salted water until al dente. Drain the pasta, reserving 1/4 cup of the cooking water. |

2. | In a separate pan, cook the Italian sausage, breaking it up into bite-sized pieces. |
3. | In a small saucepan, carefully brown the butter until it turns a nutty golden color. Remove from heat and add the coarsely chopped sage leaves. |
4. | Toss the cooked penne in the brown sage butter sauce, then combine with the cooked sausage. If the pasta seems too dry, add a little of the reserved pasta cooking water. |
5. | Finally, top the dish with freshly grated Reggiano Parmesan cheese and season with salt to taste. |
