Ingredients

3 tablespoons coriander seeds
1 tablespoon cumin seeds
½ cup shelled pistachio nuts
¼ cup sesame seeds
3 tablespoons unsweetened shredded coconut
1 teaspoon sea salt
½ teaspoon freshly cracked black pepper

Instructions

    1. Begin by delicately toasting the coriander and cumin seeds in a small skillet over medium heat until the aroma is released, approximately 2 minutes. Once toasted, transfer the spices to a spice grinder or mortar and pestle, allowing them to cool thoroughly before grinding.
    2. In the meantime, roast the pistachio nuts in a small skillet until they turn a golden hue, this should take about 5 minutes. Proceed by transferring the nuts to a cutting board and finely chop them. Reserve the chopped nuts and add sesame seeds to the skillet, toasting them until they achieve a beautiful golden brown color, typically around 2 minutes. Next, toast the unsweetened shredded coconut in the skillet, stirring continuously until it reaches a golden hue, which should take about 2 minutes. Combine the toasted coconut and seeds with the chopped nuts. Introduce the ground spices, sea salt, and freshly cracked black pepper to the mixture.
