Pork Roulade with Cranberries and Apple Cider Sauce

Instructions
1. | Preheat the oven to 350°F. Begin by plumping the raisins in a bath of cider. Peel the apple and dice it into small cubes. |

2. | Slice the pork thinly and season each slice with salt and pepper on both sides. Place a mixture of raisins and cranberries on the pork slices, then roll them tightly (letting the raisin juice flow into the baking dish). Secure the rolls with kitchen twine. Any leftover cranberries and raisins can be added to the baking dish. In a pan, melt butter over medium-high heat and brown the pork on all sides. |
3. | In a baking dish, layer the diced apple, shallot, garlic, cinnamon stick, cloves, thyme, and bay leaves. Once the pork is nicely browned, transfer it to the baking dish. Pour in a layer of cider, approximately one centimeter deep, and cover the dish with aluminum foil. Place it in the preheated oven. After 20 minutes, rotate the pork in the juices and continue baking for an additional 30 minutes or until fully cooked. Cooking time may vary based on the size of the roulades. Allow the meat to rest for 10 minutes before slicing. |
