Ravioli with Roasted Butternut Squash, Greens, and Ground Lamb

Ingredients
2 | cubed and peeled butternut squash |

2 | med to large shallots, peeled and sliced |
chard stems and leaves, chopped | |
tuscan kale, chopped | |
1 | pound ground lamb |
1 | cheese ravioli or any pasta |
1 | pinch salt, pepper, chili flakes |
Instructions
1. | Begin by peeling and cubing the butternut squash. Toss the squash with thinly sliced shallots, a drizzle of olive oil, chili flakes, salt, and pepper. Roast the mixture in a preheated 400°F oven until caramelized. |

2. | While the squash is roasting, brown the ground lamb in a large skillet with a tablespoon of olive oil. As the lamb is nearly browned, add the chopped chard and kale. Cook until wilted and combined. Add the roasted squash mixture, season with salt and pepper to taste. |
3. | Cook the ravioli according to package directions. Serve the cooked pasta in shallow bowls and top with the lamb and vegetable mixture. Finish with a dollop of ricotta cheese and, if desired, a sprinkle of additional chili flakes. |
