A delightful and refreshing salad featuring quinoa, fresh herbs, and vegetables, dressed with a zesty lemon dressing.

Ingredients

1 cup quinoa
1-2 medium tomatoes, skin and seeds removed, chopped into small cubes
12 cup parsley leaves, finely chopped
14 cups mint leaves, finely chopped
1 cucumber, seeds removed, cut into small cubes
tablespoons 2-3 tablespoons extra virgin olive oil
tablespoons 1-2 tablespoons lemon juice
Salt, for seasoning

Instructions

    1. Begin by cooking the quinoa according to the instructions on the packaging. After it is cooked, allow it to cool to room temperature.
    2. Combine all the ingredients, excluding the lemon juice, olive oil, and salt, in a mixing bowl using a wooden spoon.
    3. Prepare the dressing separately, adjust the seasoning to your taste, then drizzle it over the quinoa mixture. Mix well, cover, and refrigerate for 2 hours to meld the flavors. Serve the tabouleh chilled.
