Refreshing Quinoa Tabouleh
A delightful and refreshing salad featuring quinoa, fresh herbs, and vegetables, dressed with a zesty lemon dressing.
Ingredients
1 | cup quinoa |

1-2 medium tomatoes, skin and seeds removed, chopped into small cubes | |
1⁄2 | cup parsley leaves, finely chopped |
1⁄4 | cups mint leaves, finely chopped |
1 | cucumber, seeds removed, cut into small cubes |
tablespoons 2-3 tablespoons extra virgin olive oil | |
tablespoons 1-2 tablespoons lemon juice | |
Salt, for seasoning |
Instructions
1. | Begin by cooking the quinoa according to the instructions on the packaging. After it is cooked, allow it to cool to room temperature. |

2. | Combine all the ingredients, excluding the lemon juice, olive oil, and salt, in a mixing bowl using a wooden spoon. |
3. | Prepare the dressing separately, adjust the seasoning to your taste, then drizzle it over the quinoa mixture. Mix well, cover, and refrigerate for 2 hours to meld the flavors. Serve the tabouleh chilled. |
