Roasted Radish Cippolini with Bacon

A delicious and flavorful dish combining the sweetness of cippolini onions and the peppery bite of radishes, perfectly complemented by crispy bacon.

Instructions
1. | Begin by bringing a small pot of water to a rolling boil. Add the cippolini onions and blanch for 30 to 40 seconds. Remove from the water, allow to cool, and peel. This quick blanching method will make peeling the onions a breeze. Set aside. |

2. | Clean and trim the radishes, leaving about 1/2 inch of the stem intact. Set aside. |
3. | In a large sauté pan, cook the bacon until it is golden and crispy. Transfer the bacon to a paper towel to drain and cool. Once cooled, crumble the bacon into small pieces. Set aside. |
4. | Using the same sauté pan with the bacon drippings, add the blanched cippolini onions and radishes. Stir in the honey and red wine vinegar. Season with a pinch of salt and black pepper. Transfer the mixture to a small baking dish, approximately 10x10 inches in size. |
5. | Roast the dish in a preheated 400°F oven for 40 to 45 minutes, stirring occasionally. Once cooked, sprinkle the crumbled bacon over the top. Serve warm and enjoy the medley of flavors. |
