Ingredients
1 | (4 lb) roasting chickens |
---|---|
8 | sprigs fresh rosemary |
4-6 | garlic cloves, halved |
Instructions
1. | Begin by thoroughly cleaning and drying the whole chicken. |
---|---|
2. | Gently loosen the skin starting from the neck cavity, working your way towards the breast using your fingers. |
3. | Carefully tuck 2-3 pieces of garlic and 2 sprigs of rosemary under the skin of the breast near the wings. |
4. | Continue by sliding 2 rosemary sprigs and 2 garlic pieces beneath the skin of each drumstick. |
5. | Create small slits in the skin of each wing and insert a piece of garlic and a sprig of rosemary into each incision. |
6. | Stuff the body cavity with 2 garlic pieces and 2 rosemary sprigs, then tie the chicken legs together. Place the prepared chicken breast down in a generously sized slow cooker. |
7. | Cover the slow cooker and let the chicken cook on low heat for 6-7 hours or until the juices run clear when the thickest part of the chicken is pierced with a knife. Once cooked, remove the chicken from the slow cooker and discard the garlic and rosemary used for infusion. |
8. | Carve the chicken into portions and serve hot. |
