Ingredients: 3
A succulent and flavorful roast chicken recipe, enhanced with fresh rosemary and garlic, slowly cooked to perfection in a crock pot.
Ingredients
1 | (4 lb) roasting chickens |
---|---|
8 | sprigs fresh rosemary |
4-6 | garlic cloves, halved |
Instructions
-
- Begin by thoroughly cleaning and drying the whole chicken.
- Gently loosen the skin starting from the neck cavity, working your way towards the breast using your fingers.
- Carefully tuck 2-3 pieces of garlic and 2 sprigs of rosemary under the skin of the breast near the wings.
- Continue by sliding 2 rosemary sprigs and 2 garlic pieces beneath the skin of each drumstick.
- Create small slits in the skin of each wing and insert a piece of garlic and a sprig of rosemary into each incision.
- Stuff the body cavity with 2 garlic pieces and 2 rosemary sprigs, then tie the chicken legs together. Place the prepared chicken breast down in a generously sized slow cooker.
- Cover the slow cooker and let the chicken cook on low heat for 6-7 hours or until the juices run clear when the thickest part of the chicken is pierced with a knife. Once cooked, remove the chicken from the slow cooker and discard the garlic and rosemary used for infusion.
- Carve the chicken into portions and serve hot.
