Ingredients: 3

A succulent and flavorful roast chicken recipe, enhanced with fresh rosemary and garlic, slowly cooked to perfection in a crock pot.

Ingredients

1 (4 lb) roasting chickens
8 sprigs fresh rosemary
4-6 garlic cloves, halved

Instructions

    1. Begin by thoroughly cleaning and drying the whole chicken.
    2. Gently loosen the skin starting from the neck cavity, working your way towards the breast using your fingers.
    3. Carefully tuck 2-3 pieces of garlic and 2 sprigs of rosemary under the skin of the breast near the wings.
    4. Continue by sliding 2 rosemary sprigs and 2 garlic pieces beneath the skin of each drumstick.
    5. Create small slits in the skin of each wing and insert a piece of garlic and a sprig of rosemary into each incision.
    6. Stuff the body cavity with 2 garlic pieces and 2 rosemary sprigs, then tie the chicken legs together. Place the prepared chicken breast down in a generously sized slow cooker.
    7. Cover the slow cooker and let the chicken cook on low heat for 6-7 hours or until the juices run clear when the thickest part of the chicken is pierced with a knife. Once cooked, remove the chicken from the slow cooker and discard the garlic and rosemary used for infusion.
    8. Carve the chicken into portions and serve hot.
