Savory Chicken Casserole

1 | (3 -4 lb) whole chickens, cut into 8-10 pieces (remove excess fat) |

2 | cloves garlic cloves, crushed |
8 | ounces white pearl onions, quartered |
8 | ounces button mushrooms, quartered |
1 | baby baby fennel, chopped or fennel seed |
2-3 | cups chicken stock |
1 | whole whole fresh tomato, chopped |
1 | tablespoon italian seasoning |
8 | ounces bacon, diced |
16 | ounces white potatoes, diced small |
12 | ounces broccoli florets |
Instructions

- Begin by combining flour, salt, pepper, and chicken pieces in a plastic bag. Shake vigorously to ensure all chicken pieces are evenly coated.
- Heat vegetable oil in a large frying pan or Dutch oven, and sear the chicken uncovered for 4-5 minutes on each side until golden brown. Set the chicken aside.
- In the same pan, sauté crushed garlic, quartered onions, mushrooms, and chopped fennel until softened, about seven minutes.
- Add chicken stock, chopped tomato, Italian seasonings, fennel seeds (if using), and the seared chicken pieces. Bring to a boil, then simmer for 15 minutes.
- While the casserole is simmering, cook diced bacon until crispy. Drain on paper towels and set aside, reserving the bacon fat.
- Microwave diced potatoes for five minutes, then sauté in the reserved bacon fat until tender.
- Microwave broccoli florets for 3-4 minutes until slightly tender. Set aside.
- Add broccoli and crispy bacon to the main pan with the chicken. Cook for an additional 3-5 minutes to heat through.
- Serve the savory chicken casserole over a bed of fluffy rice or creamy mashed potatoes.
