A delightful and rustic apple galette with a whole wheat & flax pastry crust, perfect for a wholesome dinner or dessert.

cups whole wheat pastry flour

pounds apples, (about 11 medium), peeled, cored and chopped into large chunks

Instructions

1. Preparing the Whole Wheat & Flax Pie Crust:
2. Begin by chilling cut butter and the mixing bowl in the freezer for approximately 10 minutes to ensure a flaky crust.
3. In a mixing bowl, whisk together whole wheat pastry flour, flax meal, cinnamon, and sea salt.
4. Add cold butter cubes to the flour mixture and cut them in with a pastry cutter until the butter is the size of peas. Do not over mix.
5. If needed, perform steps 2 and 3 in a food processor.
6. Return the mixing bowl to the freezer for another 10 minutes to chill, then gently stir in ice water. Do not overwork the dough; it is ready when a small amount sticks together when squeezed.
7. Turn the dough out onto a smooth surface and divide it into eight pieces.
8. Using the heel of your hand, press the dough forward a couple of times to distribute the fats evenly. Avoid overworking the dough.
9. Scrape all the dough back together, divide it into 2 equal pieces, and place each on a sheet of plastic wrap. Form a 4-5 inch disk, wrap in plastic, and refrigerate for at least 1 hour.
10. Preparing the Apple Pie Filling:
11. Preheat the oven to 425 degrees Fahrenheit.
12. In a large mixing bowl, combine roughly chopped apples, cinnamon, allspice, nutmeg, lemon juice, and brown sugar if using.
13. Roll out one disc of dough between sheets of parchment until thin. Fit into a pie plate, leaving some dough over the edge. Trim any excess.
14. Pour the apple mixture into the pie dish.
15. Roll out the second disc of dough and place it over the filling. Trim and crimp the edges decoratively.
16. Brush the top crust with the beaten egg wash.
17. Make decorative slits in the top crust to release steam while baking.
18. Place the pie dish on a foil-lined baking sheet and bake in the preheated oven. Cover edges of the pie crust if needed.
19. Bake for 30 minutes, then reduce the heat to 375 degrees. Continue baking for 35-55 minutes or until the crust is browned and the filling is bubbling.
20. Cool the galette to warm or room temperature before serving. Enjoy with a side of sharp cheddar cheese for a delightful and nutritious meal.
