Ingredients

4 garlic, sliced thin
2 tablespoons olive oil
8 ounces box of Banza chickpea linguini pasta
4 cups vegetable broth
12 ounces sweet cherry tomatoes, halved
8 ounces mushrooms, sliced
1 bunch broccoli Rabe, chopped, thick stems removed
chili flakes
1 teaspoon salt or more to taste
12 lemon, juice
parmesan cheese

Instructions

1. In a large straight-sided skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the thinly sliced garlic and a touch of chili flakes. Cook until the garlic starts to brown.
2. Add the Banza chickpea linguini pasta to the skillet and gently coat it with the olive oil. Ensure the pasta is evenly coated.
3. Pour in the vegetable broth, sweet cherry tomatoes, sliced mushrooms, chopped broccoli rabe, and salt. Bring the mixture to a boil while continuously turning and tossing the pasta to prevent sticking. Cook for 8 to 10 minutes or until the pasta is al dente.
4. Remove the skillet from the heat and squeeze in the juice of half a lemon. Sprinkle a generous handful of grated Parmesan cheese and stir until combined.
