Rustic One-Pot Pasta
A flavorful and satisfying one-pot pasta dish that is easy to prepare and sure to impress your guests.
Ingredients
4 | garlic, sliced thin |

8 | ounces box of Banza chickpea linguini pasta |
4 | cups vegetable broth |
12 | ounces sweet cherry tomatoes, halved |
8 | ounces mushrooms, sliced |
1 | bunch broccoli Rabe, chopped, thick stems removed |

1 | teaspoon salt or more to taste |
1⁄2 | lemon, juice |

Instructions
1. | In a large straight-sided skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the thinly sliced garlic and a touch of chili flakes. Cook until the garlic starts to brown. |

2. | Add the Banza chickpea linguini pasta to the skillet and gently coat it with the olive oil. Ensure the pasta is evenly coated. |
3. | Pour in the vegetable broth, sweet cherry tomatoes, sliced mushrooms, chopped broccoli rabe, and salt. Bring the mixture to a boil while continuously turning and tossing the pasta to prevent sticking. Cook for 8 to 10 minutes or until the pasta is al dente. |
4. | Remove the skillet from the heat and squeeze in the juice of half a lemon. Sprinkle a generous handful of grated Parmesan cheese and stir until combined. |
