Sausage and Potato Hotpot Recipe
A hearty and flavorful dish that combines savory sausages, tender potatoes, and aromatic herbs in a delicious hotpot.
Ingredients

2 1⁄2 | chicken stock |
1 | kg chipolata sausages |
2 | cans chopped tomatoes |
1 | can lima beans or cannellini beans |
2 | tablespoons vegetable oil |
1 | teaspoon sage |
1 | teaspoon basil |

Instructions
1. | Begin by slicing the leek and coarsely chopping the potatoes. |

2. | In a deep saucepan, heat the vegetable oil over low heat. Sauté the leek for approximately 5 minutes until softened. |
3. | Add the chipolata sausages to the saucepan and cook until they are browned. |
4. | Sprinkle in 1 teaspoon of sage and 1 teaspoon of basil. Stir in 2 tablespoons of tomato paste. |
5. | Pour in the chopped tomatoes followed by the chicken stock. Stir well and season with salt and pepper. |
6. | Gently place the chopped potatoes into the saucepan. Cover and allow to simmer for 30 minutes or until the potatoes are tender. |
7. | Once the potatoes are cooked, uncover the pot and add the lima beans or cannellini beans. Let it simmer for an additional 5 minutes. |
