A hearty and flavorful dish that combines savory sausages, tender potatoes, and aromatic herbs in a delicious hotpot.

Ingredients

1 leek
2 tablespoons tomato paste
6 potatoes
2 12 chicken stock
1 kg chipolata sausages
2 cans chopped tomatoes
1 can lima beans or cannellini beans
2 tablespoons vegetable oil
1 teaspoon sage
1 teaspoon basil
salt
pepper

Instructions

    1. Begin by slicing the leek and coarsely chopping the potatoes.
    2. In a deep saucepan, heat the vegetable oil over low heat. Sauté the leek for approximately 5 minutes until softened.
    3. Add the chipolata sausages to the saucepan and cook until they are browned.
    4. Sprinkle in 1 teaspoon of sage and 1 teaspoon of basil. Stir in 2 tablespoons of tomato paste.
    5. Pour in the chopped tomatoes followed by the chicken stock. Stir well and season with salt and pepper.
    6. Gently place the chopped potatoes into the saucepan. Cover and allow to simmer for 30 minutes or until the potatoes are tender.
    7. Once the potatoes are cooked, uncover the pot and add the lima beans or cannellini beans. Let it simmer for an additional 5 minutes.
    8. Serve the hotpot with steamed vegetables or a side dish of your choice. Enjoy!
