Sausage and Potato Hotpot Recipe

1 | kg chipolata sausages |
2 | cans chopped tomatoes |
1 | can lima beans or cannellini beans |

1 | teaspoon basil |

Instructions

- Begin by slicing the leek and coarsely chopping the potatoes.
- In a deep saucepan, heat the vegetable oil over low heat. Sauté the leek for approximately 5 minutes until softened.
- Add the chipolata sausages to the saucepan and cook until they are browned.
- Sprinkle in 1 teaspoon of sage and 1 teaspoon of basil. Stir in 2 tablespoons of tomato paste.
- Pour in the chopped tomatoes followed by the chicken stock. Stir well and season with salt and pepper.
- Gently place the chopped potatoes into the saucepan. Cover and allow to simmer for 30 minutes or until the potatoes are tender.
- Once the potatoes are cooked, uncover the pot and add the lima beans or cannellini beans. Let it simmer for an additional 5 minutes.
- Serve the hotpot with steamed vegetables or a side dish of your choice. Enjoy!
