12 cup whole grain bread crumbs
14 cup pecan meal
14 teaspoon sea salt
14 teaspoon black pepper
14 teaspoon garlic powder
14 teaspoon smoked paprika
12 teaspoon dried oregano
2 eggs
Pesto, homemade or store-bought

Instructions

  • Preparation and Baking

    1. Preheat the oven to 425°F (220°C) and line a baking tray with parchment paper.
    2. In a mixing bowl, combine cooked brown rice, whole grain bread crumbs, pecan meal, sea salt, black pepper, garlic powder, smoked paprika, and dried oregano.
    3. In a separate bowl, beat the eggs and pour them into the brown rice mixture. Stir until thoroughly combined. Allow the mixture to rest for 5 minutes.
    4. Moisten your hands, then scoop out the mixture to form golf-ball sized spheres. Compact the balls and place them on the lined baking tray. Flatten each ball with the palm of your hand to create patties, ensuring the rice is firmly packed. Repeat with the remaining mixture.
    5. Bake the patties for 15 minutes, then flip them and return to the oven for an additional 10 to 15 minutes until they are lightly golden and crispy on the outside.
    6. Serve the savory brown rice patties with a drizzle of your preferred homemade or store-bought pesto.
