1. | In a saucepan, melt the unsalted butter. Add all-purpose flour and whisk in milk gradually to create a smooth bechamel (white sauce). Set aside. |
2. | In another saucepan, combine minced green garlic bulbs and horseradish with cream. Simmer gently for 10 minutes. |
3. | Combine the horseradish cream mixture with the white sauce. Simmer for a few minutes, then remove from heat to cool slightly. Adjust the horseradish to taste. |
4. | Whisk in the egg yolks until well combined. |
5. | Divide the mixture into ramekins. Place the ramekins in a large pan and fill with water to reach halfway up the sides of the ramekins. |
6. | Bake in a preheated 375°F (190°C) oven for 15 to 20 minutes, or until set. Allow to cool, then season with sea salt and ground black pepper. |
7. | Serve with a composed arrangement of lettuce, thinly sliced rare roast beef, and a drizzle of olive oil. Season with sea salt and black pepper. Thinly sliced smoked salmon is also a great alternative. |
