3 tablespoons all-purpose flour (or Wondra)
1 cup whole milk
3 tablespoons green garlic bulbs, minced
3 tablespoons horseradish, minced (more for very spicy tasting flan)
12 cup cream
3 egg yolks
sea salt and ground black pepper

Instructions

  • Preparation

    1. In a saucepan, melt the unsalted butter. Add all-purpose flour and whisk in milk gradually to create a smooth bechamel (white sauce). Set aside.
    2. In another saucepan, combine minced green garlic bulbs and horseradish with cream. Simmer gently for 10 minutes.
    3. Combine the horseradish cream mixture with the white sauce. Simmer for a few minutes, then remove from heat to cool slightly. Adjust the horseradish to taste.
    4. Whisk in the egg yolks until well combined.
    5. Divide the mixture into ramekins. Place the ramekins in a large pan and fill with water to reach halfway up the sides of the ramekins.
    6. Bake in a preheated 375°F (190°C) oven for 15 to 20 minutes, or until set. Allow to cool, then season with sea salt and ground black pepper.
    7. Serve with a composed arrangement of lettuce, thinly sliced rare roast beef, and a drizzle of olive oil. Season with sea salt and black pepper. Thinly sliced smoked salmon is also a great alternative.
