Sea Bass with Roasted Pepper Ribbons

A delectable sea bass dish served on a colorful bed of roasted pepper ribbons, infused with Mediterranean flavors.

1 | 2 lb. whole sea bass (including head and tail) cleaned, scaled, and gills removed |

1 | tablespoon 1 tsp Maldon salt |
glug+4 tablespoons olive oil | |
½ | lemon, sliced thin plus lemon quarters for serving |
4 | 4 red bell peppers |
3-4 garlic cloves, "smooshed" with a chef's knife |
Instructions

- Preheat the oven to 425°F.
- Season both the inside and outside of the sea bass with approximately 1 tablespoon of salt. Set aside.
- Thinly slice 4 red bell peppers.
- In a heavy-bottomed frying pan, heat a generous glug of olive oil over medium heat. Add the 'smooshed' garlic cloves, 1 teaspoon of Maldon salt, and the sliced bell peppers. Sauté for 15-20 minutes until the peppers are soft and glistening. Set aside.
- Create 3-4 slits sideways on the top of the fish and insert the thinly sliced lemon pieces. Place the remaining lemon slices inside the cavity of the fish.
- Generously rub the sea bass with olive oil.
- Bake the sea bass in the preheated oven, uncovered, for 15-20 minutes until the fish flakes easily and the skin is crispy.
- Remove from the oven and allow it to cool slightly. Serve the sea bass on a bed of the soft roasted bell pepper ribbons. Accompany with lemon quarters.
