Seared Salmon with Spinach and Cheese

Ingredients: 8

A delicious and nutritious dish featuring tender salmon fillets topped with wilted spinach and melted cheese.

Ingredients

1 ½ cups water
½ cup white wine
1 bay leaf
2 tablespoons chopped green onions
1 lb salmon fillet, cut into 4 pieces (or fish that your family prefers)
10 ounces frozen chopped spinach, cooked and drained (I prefer fresh spinach-cook and drain 12-16 oz.-it cooks down and my kids love spinach so I cook the)
¼ teaspoon ground nutmeg
½ cup shredded nonfat mozzarella cheese

Instructions

    1. In a large skillet, combine the water, white wine, bay leaf, and chopped green onions.
    2. Bring the mixture to a boil over high heat.
    3. Gently add the salmon fillets and bring it back to a boil. Reduce the heat to low, cover, and let it simmer for 8 to 10 minutes, or until the fish flakes easily with a fork.
    4. Remove the salmon from the skillet and pat it dry.
    5. Preheat the broiler on high heat. Line a baking sheet with foil and lightly spray it with cooking spray.
    6. Sprinkle the spinach with ground nutmeg and toss lightly. Place the salmon on the prepared baking sheet, top it with the seasoned spinach, and then sprinkle the shredded nonfat mozzarella cheese on top.
    7. Broil the dish for 1 to 2 minutes, or until the cheese is melted and lightly browned.
    8. Serve immediately and savor the flavors.
