Spiced Red Lentil Curry

A fragrant and flavorful red lentil curry infused with aromatic spices and creamy coconut milk.

Ingredients

8 ounces red lentils
4 cloves
1 cinnamon stick
4 cloves of garlic, peeled & minced
1 inch piece of fresh ginger, peeled and finely chopped
fresh ground black pepper
1 quart cold water
2 tablespoons vegetable oil
2 yellow onions, peeled & finely chopped
2 teaspoons garam masala
2 teaspoons ground coriander
1 teaspoon turmeric
½ teaspoon hot chilli powder
1 teaspoon sugar
5 large tomatoes, skinned & chopped
½ teaspoon salt
2 tablespoons cream
few sprigs of cilantro, chopped

Instructions

1. In a large saucepan, combine the red lentils, cloves, cinnamon stick, and a few grinds of pepper. Cover with water and bring to a boil. Reduce heat, partially cover, and simmer for 15-20 minutes until the lentils are tender.
2. Meanwhile, heat vegetable oil in a large pan. Add finely chopped yellow onions and sauté until softened and beginning to caramelize. Stir in minced garlic and finely chopped ginger. Add garam masala, ground coriander, turmeric, and hot chilli powder. Stir quickly to avoid burning. Once the spices are incorporated, add in chopped tomatoes and a touch of sugar.
3. Remove the cinnamon stick and cloves from the lentil mixture. Transfer the cooked lentils to the spiced onion mixture. Season with salt and simmer for an additional 10 minutes, stirring frequently.
4. Just before serving, stir in cream and freshly chopped cilantro for a creamy and herbaceous finish.
