Instructions
Preparation of Hens and Stuffing | |

1. | Preheat the oven to 375°F (190°C). |
2. | In a medium bowl, combine all stuffing ingredients, except apricot preserves, butter, and wine. |
3. | In a 1-quart saucepan, melt 1/2 cup of apricot preserves and 1/4 cup of butter. Stir this mixture into the stuffing and add 2 to 3 tablespoons of wine to moisten. |
4. | Stuff the Cornish hens with the prepared stuffing and secure the openings with toothpicks. |
5. | Tuck the wings under the hens and place them breast side up in a roasting pan. Bake for 1 hour. |
Preparation of Sauce and Final Cooking | |
1. | Meanwhile, in the same saucepan, combine all sauce ingredients. |
2. | Cook the sauce over medium heat, stirring occasionally, until melted (around 2 to 3 minutes). |
3. | Brush the hens with half of the sauce and continue baking uncovered for 40 to 50 minutes, or until the hens are fork-tender. |
4. | If the hens are browning too quickly, loosely cover them with aluminum foil. |
5. | Serve the Cornish hens with the remaining sauce on the side. |
