Recipe
Succulent Baked Tilapia with Sour Cream Parmesan Crust

The crust on this tilapia does double duty. A thick blanket of sour cream, Parmesan, garlic and paprika keeps the lean fillets moist while they bake, and a scatter of Italian-seasoned breadcrumbs on top toasts into a golden, savory shell. It's a four-serving, 35-minute answer to the eternal weeknight fish problem: how to keep it interesting without frying it.
