pound pork, cut into large cubes
salt to taste
1 teaspoon Pepper
2 tablespoons Cider vinegar
1 teaspoon Mustard
1 1-inch stick Cinnamon
4 Cloves
1 1-inch piece Ginger
1 1 garlic pod
½ cup Oil
2 Onions
3 Whole Red dry chilies
1 tablespoon Coriander powder

Instructions

  • Preparing the Pork

    1. Grind the pepper with garlic and a splash of vinegar to create a masala paste. Marinate the pork in the masala paste, along with the remaining vinegar and salt, for a minimum of one hour.
    2. Heat oil in a pan, then add chopped onions, whole chilies, and coriander powder. Sauté for 2 minutes.
    3. Add the marinated pork and cook for a few minutes before adding half a cup of hot water. Cover and simmer over low heat until the pork is tender.
    4. Serve the succulent pork roast with slices of boiled beetroots.
