Tangy Thai Summer Rolls with Crispy Tofu

A refreshing and herbaceous summer dish featuring crispy tofu, tender noodles, and a tangy Thai mint dressing.

Ingredients

14 cup finely chopped fresh mint, basil & cilantro
14 cup fresh lime juice
14 cup fish sauce
2 tablespoons brown rice vinegar
2 teaspoons finely-grated fresh ginger, more or less to taste
1 teaspoon sriracha or other chile paste or hot sauce, to taste
1 handful finely chopped fresh chives or scallions
2 tablespoons canola or other neutral oil
1 teaspoon brown sugar or sucanat (optional)
1 pound any tender Asian noodle; we recommend cellophane, soba, lo mein, or rice noodles
1 pound tofu (see note in recipe)
2 tablespoons canola oil
salt & pepper
1 bunch bunch of greens, any type
1 tomato, thinly sliced or coarsely chopped
half pound grilled, roasted, or broiled chicken, fish, steak or other cooked protein

Instructions

    1. Prepare the Tangy Thai Mint Dressing
    2. In a jar or small bowl, combine finely chopped fresh mint, basil & cilantro, fresh lime juice, fish sauce, brown rice vinegar, finely-grated fresh ginger, sriracha or other chile paste, finely chopped fresh chives or scallions, canola or other neutral oil, and brown sugar or sucanat. Whisk thoroughly to combine. Adjust seasoning to taste.
    3. Prepare the Ingredients
    4. Cut the tofu into 2x2xhalf inch blocks. Lightly coat with canola oil, salt, and pepper, then roast on a parchment-lined baking sheet at 375°F until crispy and golden, approximately 15 minutes. Alternatively, use seasoned tofu. Cut the tofu into thin slices or small chunks.
    5. Cook the noodles according to package instructions. Drain, refresh with cold water, and toss with oil to prevent sticking. Set aside.
    6. Lightly cook the greens, refresh under cold water, drain well, and coarsely chop. Set aside.
    7. Assemble the Dish
    8. In individual bowls, place a serving of noodles topped with a pile of greens, tomato pieces, tofu slices, and the cooked protein of your choice. Serve with the Tangy Thai Mint Dressing. Enjoy!
