A refreshing and zesty coleslaw with a tequila-infused twist, perfect for adding a burst of flavor to your favorite dishes.

Ingredients

2 lemons, zest and juice
2 limes, zest and juice
2 oranges, zest and juice
½ cup plain yogurt, strained
¾ cup mayo
3 tablespoons apple cider vinegar
2 tablespoons honey
1 ½ shots top shelf tequila
1 teaspoon chipotle adobo puree
½ bunch white cabbage, julienned
¼ red cabbage, julienned
3 tablespoons cilantro, chopped
1 bunch green onions, thin sliced
2 carrots, julienned
1 tablespoon salt
1 teaspoon ground black pepper

Instructions

1. Begin by straining the plain yogurt through cheesecloth set over a colander, allowing it to thicken for several hours. Utilize this time to prepare your vegetables and zest and juice your lemons, limes, and oranges.
2. In a large bowl, combine all the julienned vegetables, excluding the green onions and cilantro. Sprinkle with salt and pepper, ensuring even coating. The salt will help draw out moisture from the vegetables.
3. Whisk together the strained yogurt, mayo, citrus juices and zests, apple cider vinegar, honey, chipotle puree, and the top-notch tequila until well incorporated.
4. Thoroughly squeeze out any excess liquid from the julienned vegetables and discard the extracted liquid.
5. Combine the julienned veggies and the flavorful 'Drunken Dressing' to evenly coat everything.
6. Gently fold in the green onions and chopped cilantro.
7. Allow the coleslaw to marinate for at least 2 hours, or preferably overnight, to soak up all the delicious flavors. Season with additional salt if needed. Perfect accompaniment for fish tacos!
