Traditional Whole Wheat Irish Soda Bread
A classic recipe for wholesome and hearty Irish soda bread made with whole wheat flour, raisins, and caraway seeds.
Ingredients

1 | cup all-purpose flour |
1 | tablespoon all-purpose flour |
1 | cup whole wheat flour |
1 | cup golden raisins |
4 | teaspoons caraway seeds |
1 | teaspoon baking powder |
1 | teaspoon salt |

Instructions
1. | Preheat the oven to 325ºF and position a rack in the center. |

2. | In a medium bowl, whisk together the low-fat buttermilk and canola oil. |
3. | In a large bowl, combine 1 cup of all-purpose flour, whole wheat flour, golden raisins, caraway seeds, baking soda, baking powder, and salt. Stir in the buttermilk mixture until thoroughly moistened. |
4. | On a clean work surface, dust with 1 tablespoon of all-purpose flour. Knead the dough for 30 seconds until it coheres. Shape the dough into a round loaf about 6 inches in diameter and 1 inch high. Use a sharp knife to cut an "X" about 1/2-inch deep on the top of the loaf. |
5. | Lightly spray a baking sheet with nonstick cooking spray. Place the loaf on the sheet and bake for about 45 minutes until lightly browned and crusty. Let it cool on a wire rack for at least 15 minutes before slicing. |
