A classic recipe for wholesome and hearty Irish soda bread made with whole wheat flour, raisins, and caraway seeds.

3/4 cup low-fat buttermilk
2 tablespoons canola oil
1 cup all-purpose flour
1 tablespoon all-purpose flour
1 cup whole wheat flour
1 cup golden raisins
4 teaspoons caraway seeds
1 teaspoon baking powder
1 teaspoon salt
nonstick cooking spray

Instructions

1. Preheat the oven to 325ºF and position a rack in the center.
2. In a medium bowl, whisk together the low-fat buttermilk and canola oil.
3. In a large bowl, combine 1 cup of all-purpose flour, whole wheat flour, golden raisins, caraway seeds, baking soda, baking powder, and salt. Stir in the buttermilk mixture until thoroughly moistened.
4. On a clean work surface, dust with 1 tablespoon of all-purpose flour. Knead the dough for 30 seconds until it coheres. Shape the dough into a round loaf about 6 inches in diameter and 1 inch high. Use a sharp knife to cut an "X" about 1/2-inch deep on the top of the loaf.
5. Lightly spray a baking sheet with nonstick cooking spray. Place the loaf on the sheet and bake for about 45 minutes until lightly browned and crusty. Let it cool on a wire rack for at least 15 minutes before slicing.
