Ingredients

1 12 bags Simply Potatoes Shredded Hash Browns
1 bag Simply Potatoes Diced Potatoes with Onion
10 slices bacon
1 tablespoon cilantro
12 large red bell pepper
7 green onion stems (use white only)
1 12 packages cheddar cheese
16 ounces sour cream
1 12 tablespoons chives
salt (to taste)
pepper (to taste)
garlic powder (to taste)
paprika (to taste)
butter-flavored cooking spray

Instructions

    1. Grease the bottom and sides of a casserole dish with butter.
    2. Line the bottom of the casserole dish with Simply Potatoes Shredded Hash Browns, season lightly with salt and pepper.
    3. Layer shredded Cheddar Cheese and Bacon evenly over the hash browns without mixing. Lightly coat all ingredients with spray butter. Bake in a preheated oven at 350°F for 15 minutes, then broil for an additional 3-5 minutes until golden brown.
    4. Once out of the oven, let it cool slightly. While still warm, spread sour cream over the entire dish. Sprinkle with Cilantro, Garlic Powder, Paprika, Salt, and Pepper to taste. Add chopped Red Bell Peppers and the white part of the Green Onions. Layer Simply Potatoes Diced Potatoes with Onion on top, covering all ingredients. Lightly spray the potatoes with butter and sprinkle the remaining bacon, cheddar cheese, and chives over the top.
    5. Bake for approximately 40-45 minutes until the cheese is golden brown.
    6. Serve with a dollop of Sour Cream and garnish with Chives, Green Onions, Paprika, or Parsley for an elegant presentation.
    7. Note: The prep time includes pre-baking the bottom layer for a crust. The cook time ensures the potatoes are fully cooked through.
