Instructions
1. | In a small bowl, mix cornstarch with 1/2 cup of milk. |

2. | In a double boiler, combine the cornstarch mixture with 1 1/2 cups of milk. Cook until the mixture is thick and smooth, stirring constantly to prevent lumps. |
3. | Gradually add the slightly beaten eggs to the hot mixture, ensuring they are fully incorporated. |
4. | Using an electric mixer, blend sugar, salt, and evaporated milk in a large bowl until smooth. |
5. | Mix in the hot cornstarch mixture, ensuring everything is well combined. |
6. | Add whipping cream, remaining milk, and vanilla. Mix thoroughly. |
7. | Pour the mixture into a 1 1/2 gallon electric or hand freezer container. |
8. | Insert the paddle and cover with the lid. |
9. | Place the container in the freezer and surround it with layers of ice and salt until fully covered. |
10. | Crank the freezer until the ice cream is firm. |
11. | Remove the paddle. |
12. | Drain any excess water from the container. |
13. | Add more crushed ice and salt around the container. |
14. | Cover with a towel and store in a cool area until ready to serve. |
