3 tablespoons cornstarch
1 quart milk
2 2/3 sugar
5 eggs, slightly beaten
3/4 teaspoon salt
13 evaporated milk
3 tablespoons vanilla
2 whipping cream
1 quart half-and-half
crushed ice
ice cream salt

Instructions

1. In a small bowl, mix cornstarch with 1/2 cup of milk.
2. In a double boiler, combine the cornstarch mixture with 1 1/2 cups of milk. Cook until the mixture is thick and smooth, stirring constantly to prevent lumps.
3. Gradually add the slightly beaten eggs to the hot mixture, ensuring they are fully incorporated.
4. Using an electric mixer, blend sugar, salt, and evaporated milk in a large bowl until smooth.
5. Mix in the hot cornstarch mixture, ensuring everything is well combined.
6. Add whipping cream, remaining milk, and vanilla. Mix thoroughly.
7. Pour the mixture into a 1 1/2 gallon electric or hand freezer container.
8. Insert the paddle and cover with the lid.
9. Place the container in the freezer and surround it with layers of ice and salt until fully covered.
10. Crank the freezer until the ice cream is firm.
11. Remove the paddle.
12. Drain any excess water from the container.
13. Add more crushed ice and salt around the container.
14. Cover with a towel and store in a cool area until ready to serve.
