Noodles and Sauce

Stir-Fry

cup yellow onion, thinly sliced

teaspoons garlic, minced

teaspoon fresh ginger, minced

cups green cabbage, thinly sliced

cup carrot, julienned

cup celery, thinly sliced on the diagonal

cups bean sprout, rinsed and drained

green onion, cut into 2-inch pieces

Instructions

1. Bring a large pot of water to a boil and cook the noodles just until loosened and barely tender, then drain, rinse briefly, and shake off excess water.
2. Whisk the soy sauce, vegetarian oyster sauce, shaoxing wine, sesame oil, sugar, and white pepper in a small bowl.
3. Heat a wok or large skillet over high heat until very hot, then add 1 tablespoon vegetable oil and spread the noodles in an even layer.
4. Let the noodles sear for 1 minute, toss, and continue stir-frying for 2 to 3 minutes until lightly browned in spots, then transfer them to a plate.
5. Add the remaining 1 tablespoon vegetable oil to the wok, then stir-fry the onion for 1 minute.
6. Add the garlic and ginger and stir-fry for about 20 seconds until fragrant.
7. Add the cabbage, carrot, and celery and stir-fry for 2 to 3 minutes until the vegetables are bright and still crisp.
8. Return the noodles to the wok, pour in the sauce, and toss quickly until the noodles are evenly coated.
9. Add the bean sprouts and green onions and stir-fry for 1 minute until just wilted.
10. Taste and adjust with a small splash of soy sauce if needed, then serve immediately.
