This vegetable chow mein keeps the focus on springy egg noodles, crisp-tender vegetables, and a glossy savory sauce. The recipe drops the tofu, black bean sauce, and hot-sauce-heavy profile so it reads closer to the classic stir-fried noodle dish while remaining meatless.
