2 red onions, halved and sliced
2 red peppers (or yellow or green)
1 zucchini or yellow squash, halved and sliced
4 12 ounces whole wheat rigatoni (weight before cooking)
2 cups sliced mushrooms
1 12 teaspoons chicken bouillon (use vegetarian)
12 teaspoon paprika
1 12 ounces part-skim mozzarella cheese, shredded

Instructions

1. In a 11" x 7" baking dish, combine the sliced red onions, colorful peppers, and sliced zucchini with 2 tablespoons of water.
2. Cover the dish and microwave on High for 4 to 5 minutes, remembering to stir halfway through the cooking process.
3. Add the cooked rigatoni and the sliced mushrooms to the vegetables.
4. Toss the ingredients gently to combine them all, ensuring an even distribution of flavors.
5. Sprinkle the dish with the chicken bouillon and paprika.
6. Cover the dish again and microwave on High for 2 to 3 minutes, or until the vegetables reach the desired tenderness.
7. Sprinkle the dish with the shredded part-skim mozzarella cheese.
8. Uncover the dish and microwave on High for an additional 2 to 3 minutes, or until the cheese is perfectly melted and gooey.
9. For a Vegetarian version, ensure you use a Vegetarian Chicken-flavored bouillon or opt for a Vegetable bouillon substitute.
