| 1 | cup Splenda sugar substitute (optional) | 
| 1 | cup water | 
| 1 | cup unsweetened applesauce | 
| 1 | egg | 
| 3 | egg whites | 
| 2 1⁄3 | all-purpose flour | 
| 1 | cup whole wheat flour | 
| 2 | teaspoons baking soda | 
| 1 | teaspoon salt | 
| 1 | teaspoon baking powder | 
| 1 | tablespoon cinnamon | 
| 1 | teaspoon nutmeg | 
| 1 | teaspoon ground cloves | 
| 1. | Preheat the oven to 350°F (180°C). |

| 2. | In a large mixing bowl, combine the canned pumpkin, water, sugar, Splenda (if using), unsweetened applesauce, egg, and egg whites. | 
| 3. | Using an electric mixer, beat the ingredients until well blended. | 
| 4. | In a separate bowl, combine the all-purpose flour, whole wheat flour, baking soda, salt, baking powder, cinnamon, nutmeg, and ground cloves. Stir until well combined. |

| 6. | Spray the muffin pan cups generously with cooking spray. Alternatively, you can use cupcake liners. | 
| 7. | Fill each muffin cup with 1/3 cup of batter. There may be some leftover batter for a 25th muffin. | 
| 8. | Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. | 
| 9. | Tap the bottom of the pan to release the muffins. |
