Delight in the warmth and comforting flavors of these pumpkin spice muffins. A perfect balance of seasonal spices and sweet pumpkin, these muffins are a cozy treat for any time of day.

Ingredients

2 canned pumpkin
2 sugar
1 cup Splenda sugar substitute (optional)
1 cup water
1 cup unsweetened applesauce
1 egg
3 egg whites
2 1/3 all-purpose flour
1 cup whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground cloves

Instructions

1. Preheat the oven to 350°F (180°C).
2. In a large mixing bowl, combine the canned pumpkin, water, sugar, Splenda (if using), unsweetened applesauce, egg, and egg whites.
3. Using an electric mixer, beat the ingredients until well blended.
4. In a separate bowl, combine the all-purpose flour, whole wheat flour, baking soda, salt, baking powder, cinnamon, nutmeg, and ground cloves. Stir until well combined.
5. Slowly add the dry ingredients to the pumpkin mixture, beating until the batter is smooth.
6. Spray the muffin pan cups generously with cooking spray. Alternatively, you can use cupcake liners.
7. Fill each muffin cup with 1/3 cup of batter. There may be some leftover batter for a 25th muffin.
8. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
9. Tap the bottom of the pan to release the muffins.
