Ingredients

For the Salad

1 cup brown lentils, picked over
2 apples, cored and chopped
1 carrot, cubed
½ bunch chives, chopped
1 tablespoon chopped fresh parsley, or more to taste
5 tablespoons olive oil
2 tablespoons cider vinegar
1 teaspoon Dijon mustard, or to taste
salt and ground black pepper to taste

Instructions

For the Salad

1. Place the brown lentils in a saucepan and add enough water to cover by 1 inch. Bring to a boil, then reduce heat and simmer uncovered until the lentils are tender but maintain their shape, about 15 to 20 minutes. Drain.
2. In a bowl, combine the cooked lentils with the chopped apples, cubed carrots, chopped chives, and fresh parsley.
3. In a separate cup, stir together the olive oil, cider vinegar, Dijon mustard, salt, and pepper. Pour this dressing over the lentil mixture, mix well, and serve.
