Apple and Carrot Lentil Salad

Instructions
For the Salad | |

1. | Place the brown lentils in a saucepan and add enough water to cover by 1 inch. Bring to a boil, then reduce heat and simmer uncovered until the lentils are tender but maintain their shape, about 15 to 20 minutes. Drain. |
2. | In a bowl, combine the cooked lentils with the chopped apples, cubed carrots, chopped chives, and fresh parsley. |
